Extreme Academy's new deputy general manager Paul Dupuy

The Hotel & Extreme Academy at Watergate Bay has appointed Paula Dupuy, as deputy general manager.

Dupuy will be deputising for general manager Mark Williams in all areas of the business, with a specific focus on food and beverage.

Dupuy, who brings with her over 20 years of hospitality experience, will be working closely with the managers of the three restaurants, The Beach Hut, the Living Space, and The Brasserie. Her position will also encompass menu development and delivery alongside executive chef Tom Bradbury, plus supporting the front of house team and assisting with all aspects of health and safety.

She joins Watergate Bay from Jamie Oliver’s Fifteen, London, where she was head of restaurant operations for four years. Her work at Fifteen brought her in touch with Watergate Bay when she was tasked with setting up Fifteen Cornwall, which sits alongside the hotel.

“The launch of Fifteen Cornwall enabled me to work closely with the team at Watergate Bay, so when this exciting opportunity arose to move to Cornwall and work directly for the hotel, it seemed liked the dream job. It’s the hotel’s forward-thinking approach to hospitality that enticed me from London and I now look forward to bringing my own experience to the hotel.”
